When I am just out on a long fun ride, I eat whatever I feel like: bread slices with avocado, carrots, bananas, nuts. The key for a happy stomach and consistent energy after 6 hours, at least for me, is to stay away from sugar, and to dig into complex carbs like potato, bread, and corn chips. A banana a day while bikepacking also seems to juice me up; it’s high in potassium and fairly easily digestible.  A study showed no difference in medium-duration biking performance between Gatorade and bananas – other than that bananas make you full from the fiber, but also have vitamins and raise dopamine levels.
